Blackberry Jalapeno Glazed Pork Tenderloin

WOW. Dinner last night was superb! I recently saw on facebook that my friend, Lauren Duvall, had  cooked this amazing meal. From the words blackberry and jalapeno I was hooked. She was sweet enough to pass along the recipe and I am SO glad that she did.

It came from Guy Fieri from the Food Network.

Pork Tenderloin:



In a gallon-sized resealable plastic bag, dissolve 1/4 cup of salt in the warm water. Add the vinegar, red pepper flakes, brown sugar, ice cubes and the pork. Brine for exactly 20 minutes. The pork becomes mealy if its brined longer.


Meanwhile, prepare the Blackberry Jalapeno Glaze.


Remove the pork from the brine and pat dry. Rub the pork with the olive oil and season with 1 teaspoon salt and freshly cracked black pepper.


Preheat a grill or grill pan to medium heat.


Add the pork tenderloin and cook for 6 minutes on each side, browning evenly and the internal temperature registers 135 degrees F on an instant-read thermometer. At this point, evenly spread 1/4 cup of the glaze over the pork. Cook for an additional 4 to 5 minutes. Remove the pork from heat to a cutting board and keep it warm tented with aluminum foil.


Slice the pork, arrange the slices on a serving platter and serve with remaining warm glaze.


Blackberry Jalapeno Glaze:

  • 1 tablespoon unsalted butter
  • 1 to 2 roasted jalapenos, seeded, minced
  • 1 tablespoon chopped garlic
  • 1/2 cup seedless blackberry preserves
  • 1 1/4 cups wine, preferably Merlot, divided
  • 1/2 teaspoon cornstarch

Add the butter to a saucepan over medium-high heat. Once melted, add the jalapenos and garlic and saute for 3 to 4 minutes. Stir in the blackberry preserves and 1 cup wine and combine well. Simmer until reduced by half. Add the cornstarch to the remaining 1/4 cup red wine in a small bowl and mix well. Pour the cornstarch mixture into the pan and cook for 5 to 6 minutes more. Keep the glaze warm until serving.

Does Santa like Snicker Doodles?

Christmas time is here. Let the baking begin. I have always been a huge fan of Snicker doodles, but I’ve never actually baked them. I made it my personal mission to find a recipe that I love, and with all the thanks to Pinterest, a fabulous recipe fell right in my lap. It was SO good actually, that my day’s been ruined. I’ve eaten about 5 cookies (not to mention batter) and  now I feel totally sick. Must find self control…

Snicker Doodle Cookies

This recipe came from the “Make it Do” website, and I found this cute little site on Pinterest.

1 cup butter
1 – 1/2 cups sugar
2 eggs
3 cups flour
2 tsp. cream of tartar
1 tsp. baking soda
1/4 tsp. salt
For rolling:
3 Tbsp. sugar
3 tsp. cinnamon
Preheat the oven to 350 degrees.  Cream together sugar and butter.  Add eggs and blend well.  In a separate bowl mix together the flour, cream of tartar, baking soda, and salt.  Slowly mix into the sugar mixture until incorporated.
Shape into 1 inch balls and roll in cinnamon sugar mixture.  Bake on a greased cookie sheet at 350 degrees for 8 – 10 minutes.

MG cuts loose to the Alabama Shakes

Okay y’all. Let’s be honest. When you have two children that are 2 and under, you don’t get out much. I’m not really  in the know about anything that’s new OR cool, except the Alabama Shakes. That’s one thing I know for sure… It really doesn’t get much better. Last night Jarrod and I ventured out of our parenthood cave into the world of the living. We went to a show at the Mercy lounge, and if you haven’t seen or heard the Alabama Shakes, then you don’t know what you’re missing.
