My very own Sweet Potato Fries…

Okay, I am a total nut about sweet potato fries… I love love love them. This is my very own recipe from me to you. It is so so easy, and there really isn’t much to it, but at least I came up with it all on my own ūüôā



I usually factor in 1- 1/2 potatoes per person depending on their size.

  • Preheat oven to 400 degrees
  • Peel the potatoes, and cut into slices. Cut the potato in half vertically. Lay the flat side on the cutting board and slice into fries.
  • Spread the fries single file onto a rimmed baking sheet
  • Drizzle olive oil over the fries ( do not drench)
  • sprinkle with cinnamon, kosher salt, garlic powder, and cayenne pepper
  • put 4-8 unpeeled garlic cloves among the fries
  • Bake for 20-25 mins
  • Serve with ketchup, ¬†honey mustard, or all by themselves!
It is super delish to peel the roasted garlic and eat with the fries!!

Supper Last Night… Pork Chops with Apples & Onions, and Sweet Potato Fries

Of all the meals I make, this is Jarrod’s fave!! It is quick and easy too!!

I always vary the recipe, so here is a rough draft…

The original recipe calls for 2 bone in pork chops but last night I made 3 1 inch thick boneless pork chops…

Pork Chops:

Heat 1-2 tbsp of olive oil in cast iron skillet (turn the pan to cover the entire bottom)

Season chops with salt and pepper ( I used kosher salt and coarse pepper) on both sides.

Cook over medium high heat for about 5 mins on the first side (time varies based on how thick the chops are)

Flip the chops over, loosely cover skillet with a foil tent, and allow to cook through (another 3-4 mins).

Remove from heat and cover with foil to keep warm.

Apples and Onions:

The amount I cooks always varies depending on my mood, but last night I used 1 large white onions and 2 small gala apples.

Thinly slice the apples and onions.

In the same skillet you just cooked the pork in, add another tablespoon of olive oil and turn the pan again.

Over medium high heat cook the onions and apples for about 7-10 mins or until really tender.

I sprinkle with kosher salt, coarse black pepper, thyme, and lemon juice. (the original recipe I use has certain measurements, but I just eyeball it)

Remove from heat and put on top of the pork chops… DELISH!!

(1) Magic Dishwasher sanitzer @ $3.99. I used (1) $1/1 MC. My total on this item was $2.99

(1) Clorox Bleach @ $1.99. I used (1)$0.25 MC. My total on this item was $1.74

(3) Bags of candy for Halloween @ $4.49 each. I used (1) $2/3 Target printable and (1) $1.50/3 MC. My total for each was $3.32

(1) Kashi TLC cereal bars @ $2.99. I used (1) $1.50/1 coupon (the company mailed it to me). My total was $1.49.


Subtotal was $20.77

Total was $23.13

I used my $5 giftcard

I used a preveious giftcard that had $0.66 left on it

I paid $17.47 out of pocket



My WHOLE FOODS TRIP spent $65.25 and saved $52.38

(4) Tazo teas @ $1.49. I used (2) $2/2 coupons. The total  is  $.049 each.

DEAL OF THE DAY!! (2) Cases (10 each) of Think Thin bars $16.90 each. Total is $33.80 for 2. Case discount off of each is $1.69. total case discount is -$3.38 I used (20)  $.50/1 Whole Foods coupons and (20) $0.50/1. Total savings off of 2 cases= -$23.38!! My total for each case was $5. 21!!
