Smokey Beef Brisket Sandwiches… TO DIE FOR

A couple of weeks ago for Sunday night supper, I made a delicious beef brisket in my crock pot. I then toasted wheat buns, put the shredded meat on the bun, topped with bleu cheese slaw from whole foods, and white barbecue sauce from BB’s. The combo of all these things made these sandwiches mouth watering! These were great served with baked beans and my home-made sweet potato fries (recipe coming tonight)!

 

Beef Brisket Recipe:

makes 8 servings

1 beef brisket, about 3 lbs.

1 tablespoon of smoked paprika

1 teaspoon of salt

1/2 teaspoon of black pepper ( I doubled this)

1 large onion, chopped

4 cloves of garlic, chopped ( I used more)

1 can of stewed tomatoes (I used diced)

1 can of reduced sodium beef broth

1/4 cup of cider vinegar

1/4 cup of brown sugar

8 hamburger rolls

coleslaw (again I used Whole Foods Bleu cheese coleslaw)

 

1) Coat slow cooker bowl with cooking spray.

2)Season the brisket with paprika, salt, and pepper. Place in slow cooker. Scatter onion and garlic over brisket. Combine tomatoes, broth, vinegar, and sugar. Pour over brisket.

3) Cover and cook on HIGH for 6 hours or LOW for 9 hours.

4) Remove meat from slow cooker and cool slightly. Slice or shred and stir into sauce.

5) Remove brisket with a slotted spoon and serve on the rolls with pickles and cole slaw if desired.
