It’s been a while since I have posted about donating, so if you have been looking for a way to help others, NOW is the time! My friend Sara Anne  is a kindergarten teacher in metro Nashville. She has two students who desperately need your help. Their home recently burned down and their family has nothing… I mean nothing. The boys have been living with an aunt and uncle and their 5 children. Out of this family of 9, I think the uncle is the only one who is employed. This family was struggling long before the fire, and now they need your help. I have been collecting clothing for the children (up to size 16/18) and now I am starting to collect food and toiletries. Homemade Halloween- Sweet Hoke’s going to be a pumpkin!

Let’s face it…girls are expensive, and so far, I have two of them! I shared in a post a couple of weeks ago about the deal I scored on Henley’s Minnie Mouse costume, but that left one little quandry… What is little sister going to be? Hoke is only 14 months old, she has no idea what Halloween is, and she will never remember whether or not she dressed up. But mommy will remember. Plus she HAS to have a cute costume for pictures right?! I just couldn’t justify spending a ton of money on a costume. Most of them, despite their  price tag, cost about 10 cents to make anyway, and they are probably filled with toxins and Lord knows what else that would cause my children to itch… Enter mommy. I made Hoke’s costume for under $3.50 and it took me only 30 minutes to make.

It’s simple-

1) 1 large green bow that we already had

2) 1 bright orange oversized Hanes T-shirt (child’s size 6-8) ( $3.00)

3) 2 sheets of felt, 1 green and 1 black  (25 cents a sheet)

4) 1 needle, black thread and green thread

Cut out eyes, a nose, and a mouth out of the black felt. Cut out a green leafy neckline out of the green felt. Pin it on the shirt where you would like them to lie. Sew on, and presto. She is going to wear this over a long sleeved T shirt and leggings.  I personally think it turned out pretty cute… or maybe it’s just the baby 🙂

A glorious Birthday meal!

Yesterday I baked my little heart out! We had a birthday dinner for Jarrod’s cousin, and the highlights for me were the 3 cheese macaroni, and the CUPCAKES!

I made home made to-die-for chocolate cupcakes with old fashioned caramel icing…

Chocolate Cake recipe:

Okay…the cookbook that I got this from, Southern Living’s Big Book of Cupcakes by Jan Moon, didn’t give a temperature to set the oven to while baking these cupcakes. Ugh?!? So, even though the recipe says bake for 12-15 minutes, I had not clue what to preheat the oven to…So I did the tried and true 350 degrees, and ended up baking these cupcakes for more like 20-22 mins per batch. They turned out great to me… Also, the recipe calls for superfine sugar, but I only had cane sugar, and it was still delish…

Ingredients:

  • 1 cup Dutch process cocoa
  • 2 cups boiling water
  • 1 cup of butter, softened
  • 2 cups of superfine sugar
  • 4 large eggs
  • 2 3/4 cups of all-purpose soft-wheat flour
  • 1 tsp. baking soda
  • 1 tsp. baking powder
  • 1/2 tsp.salt
  • 1tsp. chocolate extract
Paper baking cups
Veggie cooking spray
makes 24 cupcakes
Directions:
  1. Combine cocoa and 2 cups of boiling water in a large heatproof bowl, stirring until blended and smooth; cool completely.
  2. Beat butter with mixer until creamy; gradually add sugar, beating until blended. Add eggs one at a time, beating until blended after each addition.
  3. Combine flour and next three ingredients, add to butter mixture alternately with cocoa mixture, beginning and ending with flour mixture. Beat at a low speed just until blended after after each addition. Stir in chocolate extract.
  4. Place paper baking cups in 2 (12 cup) muffin pans, and coat with cooking spray; spoon batter into cups, filling 2/3 full.
  5. Bake for 12-15 minutes. Cool in pan on wire racks for 10 mins; remove from pans, and cool completely.
Old Fashioned Caramel Icing Recipe:

Ingredients:

  • 1 cup of butter
  • 1 16oz. package of dark brown sugar
  • 1/2 cup of evaporated milk
  • 1/4 tsp. baking soda
  • 1 tbsp. light corn syrup
  • 4 cups of powdered sugar
Directions:
  1. Melt butter in a 3 quart heavy saucepan over medium heat. Add brown sugar; bring to a boil, stirring constantly, Stir in evaporated milk, baking soda and corn syrup; bring to a boil. Remove from heat, and let cool completely (about 1 hour). Transfer to a bowl.
  2. Gradually add powdered sugar to caramel mixture, beating at medium speed with an electric mixer until blended. Beat at high speed 2 minutes or until creamy. Use immediately. Makes 3 cups.

I also made a delicious 3 Cheese Macaroni (cheddar, ricotta, and parmesan)

Three Cheese Macaroni-

Serves 6-8

Ingredients:

  • 6 tablespoons of butter
  • 4 tablespoons of all-purpose flour
  • 2 cups of milk
  • 3 cups of grated sharp cheddar cheese
  • 1/3 cup of grated fresh Parmesan cheese
  • 3 tablespoons ricotta cheese
  • 1 teaspoon salt
  • 1/2 teaspoon of dry mustard
  • 1/4 teaspoon cayenne pepper ( I like spicy so I doubled this)
  • 1/2 teaspoon of ground white pepper
  • 1 lb. macaroni, cooked and drained ( I used Delallo Farfalloni pasta instead)
  • 1/2 cup of bread crumbs
Directions:
  1. Melt butter in a saucepan over low heat.
  2. Add flour, stirring to make white sauce.
  3. Add milk gradually, stirring constantly until thickened (about 10 minutes).
  4. Remove from heat. Add cheeses and spices. Stir until cheeses melt.
  5. Combine cheese sauce with macaroni.
  6. Spoon into a greased 2-quart baking dish. Top with breadcrumbs.
  7. Bake at 350 degrees for 30 minutes.

Weekend baking- perfect chocolate chip cookies!

I am a sucker for a good chocolate chip cookie…seriously… I am not ashamed to say that I have been known to replace meals with cookies. Just don’t tell my babies 🙂

I tried a new recipe this weekend and it they turned out to be delish!  The beautiful green platter is from the Willow House Verde collection and can be seen here ($34.96)

Here is the recipe… Enjoy!

Ingredients:

2 cups of unbleached organic all-purpose flour

1/2 teaspoon of baking soda

1/2 teaspoon of salt

3/4 cups of organic unsalted butter, melted

1 cup of organic packed brown sugar

1/2 cup of  organic cane sugar

1 1/2 tablespoons of vanilla extract

1 egg

1 egg yolk

2 cups of semisweet chocolate chips ( I used Ghirardelli )

Directions:

  1. Preheat oven to 325 degrees F.
  2.  Grease 2 cookie sheets or line them with parchment paper
  3. Sift together the flour, baking soda and salt, set aside
  4. In a medium bowl, cream together the melted butter, brown sugar and cane sugar until well blended.
  5. Beat in the vanilla, egg, and egg yolk until light and creamy
  6. Mix in the sifted ingredients until just blended.
  7. Stir in the chocolate chips using a wooden spoon.
  8. Drop cookie dough(about 1/4 of a cup at a time) onto cookie sheet. The cookies need to be about 3 inches apart. Makes about 18 cookies.
  9. Bake for 16-18 minutes or until the edges are lightly tasted.
  10. Cool on baking sheets for about 5 minutes before transferring to wire racks to cool.
