Grilled Chicken and Basil Pizza

This homemade pizza was absolutely delicious! We bought Mellow Mushroom dough and it tasted even better than actual Mellow Mushroom pizza!

 

Recipe:

 

makes: 6 servings

prep: 15 mins

grill: chicken for 15 mins

pizza for 6 mins

 

CHICKEN:

1 cup of fresh basil leaves; torn

2 tbsp. olive oil

2 tbsp. vinegar

1/4 teaspoon pepper

1 lb. boneless skinless chicken breast halves

 

CRUST and TOPPINGS:

1 lb. frozen pizza dough, thawed in the refrigerator (we used Mellow Mushroom dough)

2 tbsp olive oil

1/2 cup of pizza sauce

2 cups shredded mozzarella cheese

2 tbsp Parmesan or Romano cheese (we used fresh Parmesan that I grated)

3 tbsp fresh basil leaves

 

1- Prepare the chicken. Combine basil leaves, olive oil, vinegar, salt and pepper in a blender or mini chopper. While the blender is running, add 1/3 cup of water. Continue blending until smooth. Place the chicken in a glass dish and add the contents of the blender. Let stand while heating the grill.

2- Crust and Toppings. Divide thawed dough in half. Roll each half on a lightly floured surface to a nine inch circle. Let rest.

 

3- Heat a gas grill to medium high, or a charcoal grill to medium hot. Grill chicken for 15 minutes or until cooked through, turning once. Remove to a cutting board and slice into bite sized pieces.

4- Brush pizza doughs with some of the olive oil. Transfer doughs, oil side down onto the grill. Brush dough tops with olive oil. Cover and grill 3 minutes. Using tongs and a spatula, flip over doughs. Working quickly, spread 1/4 cup pizza sauce onto each pie. Top with mozzarella. Cover and grill 2 minutes. Uncover and divide grilled chicken between pies. Grill 1 minute. Remove pizzas to cutting board and top with grated cheese and fresh basil and serve!

    Yay, homemade pizza. I hate buying them, such a waste of money and so bad for you. This looks delicious, if a little crazy 😛
